If you are thinking about deep frying your Thanksgiving or Christmas turkey, as long as you take some basic safety precautions, and as long as you buy your bulk peanut oil well in advance (because Costco and Smart and Final will be sold out by the holiday), I absolutely encourage you to do so.
The first time I ever had deep fried turkey, it hadn’t even been brined in advance, it hadn’t even been seasoned, it was just an average run of the mill turkey taken straight from the fridge and dunked in the peanut oil, and even so, it was the most fabulous turkey I’ve ever had in my life. The turkey was a beautiful deep, rich caramel brown color, the aroma was unbelievably wonderful, the skin was crisp, it wasn’t greasy, the meat was juicy and tasty, it was WONDERFUL. Even better, we were able to fry a 12 pound turkey in 45 minutes, and then fried a second one right after it for leftovers. Especially if you are having a large family gathering or a holiday party, there isn’t another way to cook so much turkey in such an abbreviated amount of time — and its extremely tasty!
