When I saw this cookbook on the bookshelf, I immediately snatched it up and said “that’s for me!” I’m not the only one: I took the book to work to read during lunch, and ended up loaning it to a co-worker (who promptly bought her own copy). I’ve always been interested in charcuterie, home made dairy products and cheese making, but thought it would be too hard or time consuming to do at home. I was wrong! You can make your own butter, sour cream, cream cheese, ricotta, yogurt and crème fraîche without lots of specialty ingredients, without having to buy a lot of extra kitchen equipment, and without spending all your free time to do it.

You can make home made butter in a food processor, a blender, or your Kitchen Aid standing mixer in less than twenty minutes! And if you follow the step to remove the milk solids, not only will the butter remain fresh longer, you will automatically have CLARIFIED butter (no more paying premium prices for clarified butter, no more having to melt the butter to try to spoon out the milk solids from the bottom.) If you have children who want to help you with your baking, you can even let THEM make the butter in a sealed glass jar by letting them shake it for you. Making Christmas butter cookies will be extra special for your kids when they get to not only help you make the cookies, but help you make the special ingredient! (And maybe you can even get them to eat a few more vegetables if you put a little of the butter they made on them!)
